  • ¼ tsp black pepper Try crushed red pepper for more heat.
  • 3 cloves garlic (minced) Garlic powder can work in a pinch.
  • 1 cup heavy cream Use coconut cream for dairy-free.
  • ½ cup chicken broth Vegetable broth is a great alternative.
  • ½ cup grated Parmesan cheese Nutritional yeast is a vegan substitute.
  • ½ cup sun-dried tomatoes (chopped) Fresh tomatoes can work, but adjust liquid levels.
  • 3 cups baby spinach Kale also works well.
  • ½ tsp Italian seasoning Homemade mixes can elevate the flavor.

Method
 

Preparation
  1. Gather all your ingredients, ensuring everything is fresh.
  2. Chop the sun-dried tomatoes and mince the garlic.
  3. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Place cod fillets into the skillet and cook for 3-4 minutes on each side until golden.
  4. Remove cod from skillet and set aside.
  5. In the same skillet, pour in chicken broth and heavy cream, scraping up browned bits.
  6. Stir in grated Parmesan cheese until smooth.
  7. Add chopped sun-dried tomatoes and spinach, stirring until spinach wilts.
  8. Sprinkle in Italian seasoning.
  9. Return cod to skillet and spoon sauce over, allowing to simmer to meld flavors.
  10. Serve hot and enjoy.

Notes

Skip the seasoning step to avoid bland flavors. Do not overcook the cod to prevent dryness. Fresh herbs elevate the flavor, and letting the sauce simmer enhances creaminess.
