Ingredients
  

Popsicle Base
  • 1 cup water Helps dissolve the sugar.
  • 1/2 cup fresh lemon juice Provides bright, zesty flavor.
  • 3/4 cup granulated sugar Sweetens the mixture.
  • 1 cup whole milk Adds creaminess and richness.
  • 1 cup heavy cream Contributes to creamy consistency.

Method
 

Preparation
  1. In a medium pot, add the water, lemon juice, and sugar; stir to combine.
  2. Bring to a boil and boil for 5 minutes while stirring often.
  3. In a separate bowl, whip the cream until stiff peaks form.
  4. Remove the pot from heat and let the mixture cool completely.
  5. Once the mixture is cool, add the milk and stir to combine.
  6. Gently fold the whipped cream into the lemon juice and milk mixture, whisking to combine.
Freezing
  1. Place the mixture in a freezer-safe container and freeze for 30 minutes, then stir well.
  2. Stir every 30 minutes for a total of 3 additional times.
  3. After the final stir, pour the mixture into popsicle molds.
  4. Freeze for 4-5 hours or until the popsicles are completely firm.

Notes

Use fresh lemons for the juiciest flavor. Make sure the whipped cream forms stiff peaks for best texture. Allow the mixture to cool completely to prevent melting the whipped cream. Store in an airtight container to prevent freezer burn.
