Preparation
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet and cook for 5-6 minutes on each side until golden brown.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add cherry tomatoes and cook until they start to blister, about 3-4 minutes.
- Reduce heat to low, stir in the heavy cream and pesto, and combine well.
- Return the chicken to the skillet, spooning the sauce over the top.
- Transfer the skillet to the oven and roast for 15-20 minutes, until the chicken is cooked through.
- Serve with grated Parmesan cheese and fresh basil on top.
Notes
Make it ahead: You can season chicken the night before and let it marinate for extra flavor. Serve with whole grain pasta or a side salad for a complete meal.
