Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper, then add them to the skillet and cook for 5-6 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add cherry tomatoes and cook until they start to blister, about 3-4 minutes.
  6. Reduce heat to low, stir in the heavy cream and pesto, and combine well.
  7. Return the chicken to the skillet, spooning the sauce over the top.
  8. Transfer the skillet to the oven and roast for 15-20 minutes, until the chicken is cooked through.
  9. Serve with grated Parmesan cheese and fresh basil on top.

Notes

Make it ahead: You can season chicken the night before and let it marinate for extra flavor. Serve with whole grain pasta or a side salad for a complete meal.
