  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and bell peppers, cooking for 3-4 minutes until softened.
  4. Stir in the spices—chili powder, cumin, paprika, and optional cayenne—and cook for an additional minute until fragrant.
  5. Pour in the chicken broth, simmering and scraping up any browned bits from the bottom.
  6. Reduce heat to low, then mix in the heavy cream and cheddar cheese until the cheese melts and the sauce turns creamy.
  7. Return the cooked chicken to the skillet, stirring to coat in the sauce, and heat through for 2-3 minutes.
  8. Serve hot, garnished with fresh cilantro and lime wedges.
