Preparation
  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the white beans, broth, thyme, smoked paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 15-20 minutes.
  5. Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
  6. Stir in the cream (or coconut milk) and heat through.
  7. Serve hot, garnished with fresh parsley.
