Preparation
- Place a large pot on the stovetop over medium heat.
- Add butter and swirl the pot until it's fully melted.
- Add the chopped onion and sauté for about 5 minutes until softened.
- Stir in minced garlic and sauté for another 2 minutes until fragrant.
- Incorporate the chopped zucchini, salt, and black pepper and sauté for 10 minutes until softened.
- Add vegetable or chicken broth and stir to mix well.
Cooking
- Allow to simmer for 15 minutes on low heat, stirring frequently.
- Remove from heat and let it cool slightly.
- Using an immersion blender, puree the soup until smooth.
- Taste the soup, adjust seasoning with more salt and pepper if needed, then serve immediately.
Notes
For a creamier finish, blend in a little plain yogurt or sour cream after puree. Soup can be made in larger batches and freezes well.
