For the base
  • 2 tablespoons butter or ghee, or neutral oil Provides a rich base to sauté the vegetables.
  • 1 medium yellow onion Adds sweetness and depth of flavor.
  • 2 cloves garlic Infuses a fragrant earthy taste.
  • 4 cups chopped zucchini The star of the dish providing fresh flavor.
Seasoning and broth
  • 1 teaspoon salt Enhances overall flavor profile.
  • 1/2 teaspoon freshly cracked black pepper Offers warmth and a gentle kick.
  • 4 cups low-sodium vegetable broth or chicken broth Serves as the liquid base.

Method
 

Preparation
  1. Place a large pot on the stovetop over medium heat.
  2. Add butter and swirl the pot until it's fully melted.
  3. Add the chopped onion and sauté for about 5 minutes until softened.
  4. Stir in minced garlic and sauté for another 2 minutes until fragrant.
  5. Incorporate the chopped zucchini, salt, and black pepper and sauté for 10 minutes until softened.
  6. Add vegetable or chicken broth and stir to mix well.
Cooking
  1. Allow to simmer for 15 minutes on low heat, stirring frequently.
  2. Remove from heat and let it cool slightly.
  3. Using an immersion blender, puree the soup until smooth.
  4. Taste the soup, adjust seasoning with more salt and pepper if needed, then serve immediately.

Notes

For a creamier finish, blend in a little plain yogurt or sour cream after puree. Soup can be made in larger batches and freezes well.
