Ingredients

For the Casserole
  • 4 slices French bread or brioche-style bread The star of the dish, offering sturdy slices that soak up the mixture beautifully.
  • 1 can canned coconut cream Creates a luscious base, imparting a rich creaminess.
  • 1 cup unsweetened almond milk Contributes to the overall creaminess while keeping the dish dairy-free.
  • 1/4 cup cornstarch Acts as a thickening agent, giving the custard its desirable texture.
  • 2 tbsp vanilla extract Enhances all the flavors with its warm, aromatic notes.
  • 1/4 cup brandy-based orange liqueur Adds a hint of citrusy depth and sophistication.
  • 1 pinch sea salt Balances sweetness and elevates the overall flavor profile.
  • 1 tsp turmeric (optional) Provides a touch of color, making the dish visually appealing.
For the Caramel Base
  • 1/4 cup vegan butter Adds richness and helps achieve that creamy texture.
  • 1/2 cup brown sugar Provides sweetness and a deep, caramelized flavor.
  • 1/4 cup maple syrup or corn syrup Gives a touch of sweetness and enhances moisture.

Method

Preparation
  1. In a saucepan, melt the vegan butter and brown sugar together, stirring until fully combined and simmering.
  2. Stir in the maple or corn syrup, allowing it to blend harmoniously with the butter and sugar mixture.
  3. Place half of the French bread slices in a greased baking dish, covering the bottom evenly.
Custard Mixing
  1. In a large bowl, whisk together coconut cream, almond milk, cornstarch, maple syrup, vanilla extract, orange liqueur, sea salt, and optional turmeric until smooth and well combined.
  2. Carefully pour half of the custard mixture over the first layer of bread, ensuring it’s evenly distributed.
  3. Place the remaining slices of bread on top, layering them gently over the custard.
  4. Pour the remaining custard mixture over the second layer of bread, ensuring it’s nicely soaked.
Refrigeration & Baking
  1. Cover the dish with plastic wrap and let it sit in the refrigerator for at least an hour or up to overnight to absorb the flavors.
  2. Preheat the oven to 350°F (175°C) and bake uncovered for about 40-45 minutes or until the top is golden brown and slightly crispy.
Serving
  1. Remove from the oven, allow to cool slightly, and serve warm, drizzled with extra maple syrup if desired.

Notes

To achieve the perfect texture, ensure the bread is slightly stale for optimal absorption of the custard mixture. Allowing the casserole to sit overnight enhances the flavors, making it richer and more indulgent. If you prefer a more caramelized top, consider broiling for an additional minute after baking, but keep a close watch to prevent burning.
