Preparation
  1. Preheat the oven to 400°F (200°C) so it’s hot and ready when you are.
  2. In a bowl, mix the cooked shredded chicken, cheese, green onions, cilantro, cumin, chili powder, salt, and pepper until well-blended.
  3. Microwave the tortillas for 30 seconds to soften them.
Assembly
  1. Spoon 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla.
  2. Carefully roll each tortilla tightly around the filling and place seam-side down on a greased baking sheet.
  3. Spray the tops of the rolled taquitos with cooking spray or brush with olive oil.
Baking
  1. Place in the oven and bake for 20-25 minutes, or until the taquitos are crispy and golden brown.
  2. Remove from the oven and serve warm with salsa or guacamole.

Notes

Make a double batch and freeze some for busy nights. Warm tortillas for better rolling and avoid tearing. Experiment with different cheeses for varied flavor profiles.
