Ingredients

  • 2 pounds sweet potatoes (about 2 medium-large or 3 medium)
  • 1 tablespoon cornstarch
  • 0.5 teaspoon fine sea salt
  • 2 tablespoons extra-virgin olive oil
  • Optional spices: black pepper, cayenne, garlic powder

Equipment

  • baking sheets for roasting fries
  • parchment paper to prevent sticking
  • metal spatula for flipping fries
  • Mixing bowl to toss fries with oil and seasoning

Method

  1. Preheat oven to 425°F with racks in lower and upper thirds. Line two baking sheets with parchment paper.
  2. Peel and cut sweet potatoes into 1/4-inch thick fries. Divide evenly across two pans.
  3. Sprinkle cornstarch and salt evenly. Toss to coat. Drizzle with olive oil and toss until coated.
  4. Arrange fries in a single layer without crowding. Bake 20 minutes, then flip with a spatula.
  5. Swap pans, continue baking 10–18 minutes until crispy. Watch closely to avoid burning.
  6. Season with optional spices and serve warm.

Notes

Best served hot and fresh, but leftovers can be refrigerated up to 4 days. Reheat in the oven to bring back crispness. You can also prep fries ahead by slicing and storing them in water, then drying thoroughly before baking.
