Taquito Filling
  • 2 cups cooked shredded chicken Rotisserie chicken works excellently.
  • 4 oz cream cheese, softened Greek yogurt can be a healthier alternative.
  • ½ cup shredded cheddar or Mexican blend cheese Feel free to use your favorite cheese.
  • ¼ cup salsa Choose mild or spicy based on preference.
  • ½ tsp garlic powder Fresh garlic can be used; just use one clove, minced.
  • ½ tsp chili powder Adjust to taste for more heat.
  • ½ tsp cumin Adds an earthy flavor.
  • Salt and black pepper To taste.
  • 8 small flour or corn tortillas Whole wheat for a healthier option.
  • Cooking spray or oil For brushing to achieve a crispy exterior.
  • Chopped cilantro Optional for garnishing.
  • Sour cream, guacamole, or extra shredded cheese Serve with any of these condiments.

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or grease it lightly.
  2. In a large bowl, blend the shredded chicken, cream cheese, shredded cheese, salsa, garlic powder, chili powder, cumin, salt, and pepper until well combined.
  3. Warm your tortillas in the microwave for about 20 seconds to make them flexible.
  4. Place 2-3 tablespoons of the chicken filling on one side of each tortilla and roll tightly.
  5. Arrange the rolled taquitos seam-side down on the prepared baking sheet.
  6. Lightly brush them with oil or spray with cooking spray to ensure a crispy coating.
Baking
  1. Bake taquitos for 15-20 minutes, or until golden brown and crispy. Broil for an extra 1-2 minutes at the end for added crunch.
  2. Serve warm with sour cream, guacamole, or your favorite toppings.

Notes

Not warming the tortillas before rolling can lead to breaking. Avoid overfilling each tortilla. Skipping the oil spray will hinder crispiness. Consider adding fresh jalapeños for extra heat. Use leftover chicken or turkey to reduce prep time.
