  • 4 pieces Potatoes Russets yield the best results.
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • to taste Salt & Pepper Experiment with flavored salts.
  • 2 cloves Garlic Freshly minced for best flavor; garlic powder can be used instead.
  • 2 tablespoons Fresh Parsley Freshness is key.
  • 1 tablespoon Fresh Rosemary Can substitute with thyme or oregano.
  • 1/4 cup Parmesan Cheese (optional) Nutritional yeast can be used as a vegan alternative.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the potatoes in half lengthwise and scoop out the insides, leaving about 1/4 inch of flesh.
  3. Brush the potato skins with olive oil and season with salt and pepper.
  4. Place the skins cut-side down on a baking sheet and roast for 20 minutes until they start to crisp.
Mix Seasoning
  1. In a small bowl, mix the minced garlic, chopped parsley, and rosemary.
Final Roasting
  1. After 20 minutes, flip the potato skins over, sprinkle the garlic herb mixture inside, and add grated Parmesan if using.
  2. Return to the oven and roast for an additional 10-15 minutes until golden brown and crispy.
  3. Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F (175°C) for 10-15 minutes to regain crispiness. Unbaked potato skins can be frozen; prepare and stuff them before final bake.
