  • 2 tablespoons lemon zest Bottled zest can be used if fresh lemons aren't available.
  • 3 cloves garlic Minced garlic; use garlic powder as a substitute.
  • 1 teaspoon salt Adjust if watching sodium intake.
  • 1/2 teaspoon black pepper Cayenne can be used as an alternative.
  • 2 large eggs Beaten; use aquafaba for a vegan option.
  • 1/4 cup all-purpose flour Cornstarch can work too.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together breadcrumbs, grated Parmesan cheese, lemon zest, minced garlic, salt, and black pepper.
  3. Set up your breading station with one plate of flour, one bowl of beaten eggs, and another plate for the breadcrumb mixture.
Breading and Cooking
  1. Dredge each chicken tender in flour, dip in the beaten eggs, and coat with the breadcrumb mixture.
  2. Heat oil in a skillet over medium-high heat.
  3. Fry the chicken tenders for about 3-4 minutes on each side until golden brown and crispy.
  4. Transfer the tenders onto a baking sheet and finish cooking in the oven for an additional 10 minutes.
