Method
 

Preparation
  1. Wash and trim any excess fat from the chicken breasts.
  2. Chop the onion and garlic, preparing them for layering in the crock pot.
  3. Gather the BBQ sauce and seasonings to use later.
Cooking
  1. Place the chopped onion and garlic at the bottom of the crock pot.
  2. Add the chicken breasts on top of the onion mixture.
  3. Pour the BBQ sauce evenly over the chicken.
  4. Sprinkle with salt and black pepper to season.
  5. Cover and set your crock pot to low and let it cook for 6-8 hours or high for 4 hours.
  6. Check for doneness: the chicken should shred easily with a fork when fully cooked.
Serving
  1. Once cooked, remove the chicken from the crock pot and shred it using two forks.
  2. Return the shredded chicken to the pot and stir to coat in the BBQ sauce.
  3. Serve hot, either on its own or in your favorite sandwich or wrap.

Notes

For the best results, marinate the chicken in BBQ sauce for a couple of hours before cooking. Use a meat thermometer to ensure chicken is cooked to at least 165°F (74°C). Consider adding additional spices like smoked paprika for enhanced smokiness. For a thicker sauce, remove the lid during the last hour of cooking. Store shredded chicken in airtight containers for convenient meal prep.
