Method
 

Preparation
  1. In a skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides.
  2. Transfer the beef to a crockpot.
  3. Add the carrots, potatoes, onion, and garlic to the crockpot.
  4. Stir in the beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper.
Cooking
  1. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  2. Serve hot, and enjoy!

Notes

For added flavor, consider adding red wine for the last hour of cooking. To thicken the stew, mash a portion of the potatoes before serving. Avoid skipping the browning step to maintain depth of flavor, and ensure proper seasoning to prevent blandness.
