  • 4 pieces Chicken Breasts Swap for thighs for extra tenderness.
  • 2 cups Sweet Potatoes, peeled and diced Regular potatoes can work, but will alter the taste.
  • 1 medium Onion, chopped Shallots or leeks make good substitutes.
  • 3 cloves Garlic, minced If short on fresh, use garlic powder.
  • 1 cup Chicken Broth Vegetable broth is a great alternative.
  • 1 teaspoon Paprika Adjust seasoning to your preference.
  • to taste Salt Adjust seasoning to your preference.
  • to taste Pepper Adjust seasoning to your preference.

Method
 

Preparation
  1. Place the sweet potatoes and onions at the bottom of the crockpot.
  2. Season the chicken breasts with paprika, salt, and pepper, and place them on top of the sweet potatoes.
  3. Add minced garlic and pour the chicken broth over the top.
  4. Cover the crockpot and cook on low for 6-8 hours or high for 4-5 hours until the chicken is cooked through.
  5. Shred the chicken with two forks and mix it with the sweet potatoes and sauce.
  6. Garnish with fresh parsley before serving.

Notes

Avoid overcrowding the crockpot to prevent uneven cooking. Skipping seasoning can lead to a bland dish. Prepare ingredients the night before for convenience. Add vegetables like bell peppers for flavor.
