Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 2 cans white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 cup diced green chiles
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 4 oz cream cheese or Greek yogurt

Equipment

  • Crockpot for slow cooking the chili
  • Wooden spoon for stirring

Method
 

  1. Place chicken, beans, onion, garlic, chiles, broth, and spices in crockpot.
  2. Cook on low for 6–7 hours or high for 3–4 hours.
  3. Shred chicken in the crockpot.
  4. Stir in cream cheese or Greek yogurt until smooth.
  5. Rest for 10 minutes before serving.

Notes

For best results, add dairy at the end of cooking to prevent curdling. This recipe freezes beautifully for up to 3 months.
