Preparation
- Preheat the oven to 425°F (220°C).
- In a bowl, mix together the shredded chicken, cheese, salsa, cumin, garlic powder, and salt.
- Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
- Place a few tablespoons of the chicken mixture in the center of each tortilla and roll them tightly.
- Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
- Spray the taquitos lightly with cooking spray.
- Bake in the preheated oven for 15-20 minutes or until golden and crispy.
- Serve with additional salsa or your favorite dipping sauce.
Notes
Store leftover taquitos in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness. You can freeze unbaked taquitos after preparing them; flash freeze before transferring to a freezer bag.
