  • 2 cups Shredded cooked chicken You can substitute with rotisserie chicken for convenience.
  • 1 cup Cheddar cheese Swap with Monterey Jack for a different flavor.
  • 1 cup Salsa Any jarred variety works well.
  • 1 teaspoon Cumin Swap with taco seasoning if you prefer.
  • 1 teaspoon Garlic powder Fresh garlic can be used instead.
  • 12 pieces Corn tortillas Flour tortillas can be an alternative but won’t be as crispy.

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix together the shredded chicken, cheese, salsa, cumin, garlic powder, and salt.
  3. Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
  4. Place a few tablespoons of the chicken mixture in the center of each tortilla and roll them tightly.
  5. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Spray the taquitos lightly with cooking spray.
  7. Bake in the preheated oven for 15-20 minutes or until golden and crispy.
  8. Serve with additional salsa or your favorite dipping sauce.

Notes

Store leftover taquitos in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness. You can freeze unbaked taquitos after preparing them; flash freeze before transferring to a freezer bag.
