  • 3 stalks celery Adds crunch and a hint of bitterness; feel free to substitute with jicama for a twist.
  • 1 large Granny Smith apple Introduces sweetness and tartness; Honeycrisp apples can offer a sweeter option.
  • 1/8 cup red onion Provides a zesty bite; swap for green onions for a milder flavor.
Dressing Ingredients
  • 1/4 cup extra virgin olive oil Ensures richness; avocado oil is a great substitute.
  • 1/4 cup dill Brings a fresh, herby flavor; fennel fronds can be an alternative.
  • 1/4 cup mint leaves Adds a refreshing note; basil can be a unique twist.
  • 1 clove garlic Infuses depth; use garlic powder for convenience.
  • 1 pinch salt Enhances overall flavor; sea salt is often preferred.
  • 2 tbsp apple cider vinegar Adds tang; lemon juice can also brighten up the flavor.

Method
 

Preparation
  1. Slice the cucumber in half lengthwise and scoop out the seeds. Dice the cucumber into rounds. Chop the celery into fine pieces, core and dice the apple, and if you choose to include it, slice the red onion.
  2. Combine the olive oil, apple cider vinegar, dill, mint, garlic, and salt in a blender until it becomes a vibrant herb vinaigrette.
  3. Mix the cucumber, celery, apple, and red onion in a large bowl, drizzle with half of the dressing, and toss well. Taste and adjust with additional dressing as necessary.

Notes

Allow the salad to rest in the fridge before serving for enhanced flavor. Avoid over-mixing as it can make the salad watery.
