- Slice the cucumber in half lengthwise and scoop out the seeds. Dice the cucumber into rounds. Chop the celery into fine pieces, core and dice the apple, and if you choose to include it, slice the red onion.
- Combine the olive oil, apple cider vinegar, dill, mint, garlic, and salt in a blender until it becomes a vibrant herb vinaigrette.
- Mix the cucumber, celery, apple, and red onion in a large bowl, drizzle with half of the dressing, and toss well. Taste and adjust with additional dressing as necessary.
Notes
Allow the salad to rest in the fridge before serving for enhanced flavor. Avoid over-mixing as it can make the salad watery.
