Method
 

Preparation
  1. Thinly slice the cucumbers and radishes using a sharp knife or mandolin for even slices.
  2. Finely chop the red onion and parsley.
  3. In a large bowl, combine the cucumbers, radishes, onion, and parsley, and toss gently.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss gently until evenly coated.
  6. Serve immediately or chill in the refrigerator for 30 minutes for better flavor.

Notes

For substitutions, use cilantro instead of parsley. Store any unused salad in an airtight container for up to two days.
