Preparation
  1. Slice the cucumbers thinly and place them in a large colander. Sprinkle with salt and toss gently. Let them drain for about 30 minutes to draw out excess moisture.
  2. In a large mixing bowl, combine the drained cucumbers, red onion, and halved cherry tomatoes.
  3. In a small bowl, whisk together the apple cider vinegar and olive oil until well combined. Add freshly ground black pepper to taste.
  4. Pour the dressing over the cucumber mixture. Toss well to ensure even coating.
  5. Gently fold in the crumbled feta and chopped dill. Adjust seasoning if needed.
  6. For the best flavor, let the salad chill in the refrigerator for about 30 minutes before serving.
