  • 200 g Pitted Dates The base for your caramel; can substitute with dried figs for different flavor.
  • 400 mL Water Essential for softening the dates; consider adding a splash of vanilla extract for flavor.

  1. Simmer the dates in water over low heat for about 15 minutes or until they soften.
  2. Transfer all to a food processor and blitz into a smooth date cream.
  3. Pour the date cream into a cheesecloth, squeezing tightly to extract the syrup water into a bowl.
Cooking
  1. Transfer the syrup to a saucepan and bring to a boil over medium heat.
  2. Simmer for about 8 minutes until the surface is covered in frothy bubbles and the syrup has darkened.
  3. Dip the pot with the caramel in a cold water bath. Whisk until it thickens and then transfer it into a jar.

Notes

Common mistakes to avoid include not soaking the dates beforehand and skipping the cold water bath. For added richness, drizzle coconut cream into the caramel before chilling. Experiment with spices like cinnamon or nutmeg for extra flavor.
