  • 1/2 cup peanut butter Provides protein and healthy fats; choose natural for a cleaner option.
  • 1/4 cup honey or maple syrup Adds sweet flavor; for a lower sugar option, choose sugar-free maple syrup.
  • 1/2 teaspoon vanilla extract Enhances the overall flavor.
  • 1/4 cup chocolate chips Optional for sweetness; can be omitted for a less sugary treat.
  • 1 pinch salt Balances sweetness and enhances flavors.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the oats, peanut butter, honey, vanilla, and salt. Stir until fully incorporated.
  3. Gently fold in chocolate chips if desired.
  4. Spoon the mixture into a muffin tin, filling each cup about 3/4 full.
Baking
  1. Bake for 12-15 minutes until edges are golden brown.
  2. Allow to cool slightly in the tin before gently removing.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Excellent for meal prep and can be frozen for up to three months.
