Preparation
  1. Gather all your ingredients and kitchen tools.
  2. Preheat your skillet or griddle over medium heat.
  3. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
Cooking
  1. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla.
  2. Pour the wet ingredients into the dry ingredients and mix until just combined; some lumps are okay!
  3. Lightly grease the skillet with butter or oil. Pour 1/4 cup of batter for each pancake.
  4. Cook until bubbles appear on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
Serving
  1. Transfer pancakes to a warm plate as they finish.
  2. Stack them high and keep warm in the oven if making a large batch.

Notes

For fluffier pancakes, allow batter to rest for 5-10 minutes before cooking. Store leftovers in a zip-lock bag for easy access during the week. Can be frozen for up to 2 months. Reheat in the microwave or oven for best results.
