Ingredients
  

For the Potatoes
  • 12 small small potatoes Waxy varieties like red potatoes work great.
For the Filling
  • 1/2 cup mayonnaise Greek yogurt can be a lighter option.
  • 1 tablespoon mustard Dijon mustard offers a delicious kick.
  • 1 teaspoon garlic powder Fresh minced garlic can enhance flavor.
  • to taste Salt and pepper Feel free to use other spices like paprika.
  • 2 tablespoons chopped chives Parsley or green onions may also work.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes.
  3. Boil the potatoes in salted water until tender, about 15-20 minutes.
  4. Drain and let cool slightly.
Filling
  1. Cut the potatoes in half and scoop out a small portion of the flesh.
  2. In a bowl, mix the scooped potato flesh with mayonnaise, mustard, garlic powder, salt, and pepper.
  3. Fill the potato halves with the mixture.
  4. Garnish with chopped chives.
Serving
  1. Serve warm or cold.

Notes

Avoid overboiling the potatoes to prevent mushiness. Season the filling for the best flavor.
