Ingredients

Main Ingredients
  • 1 lb ground chicken Can substitute with ground turkey for a leaner option.
  • 1 tsp garlic powder Fresh minced garlic works just as well.
  • 1 tsp paprika Smoked paprika can elevate the flavor.
  • Salt and black pepper Essential seasonings to taste; feel free to add chili powder for heat.
  • 8 small tortillas Choose corn or flour based on preference; lettuce wraps offer a low-carb option.
  • 1 cup shredded mozzarella or Jack cheese Cheddar could add a sharper flavor.
  • 1/2 cup chopped dill pickles Dill relish is also a great alternative.
  • 2 tbsp pickle brine Lemon juice can be used as a substitute.
  • 1 cup shredded cabbage Slaw mix brings additional flavor and texture.
  • 1/2 cup cottage cheese blended with 1 tsp ranch seasoning and a squeeze of lemon Greek yogurt can be used for a tangy twist.

Method

Preparation
  1. Mix ground chicken with garlic powder, paprika, salt, and pepper.
  2. Form the mixture into patties about 2 inches wide.
Cooking
  1. In a skillet over medium heat, cook the patties until fully cooked through, about 5-7 minutes.
  2. Remove from the skillet and smash the cooked chicken to create a more appealing texture.
  3. In the same skillet, sprinkle shredded cheese in a thin layer to form a lace, cooking until crispy.
  4. Warm the tortillas in the same skillet for about 30 seconds on each side.
Assembly
  1. Assemble tacos by layering smashed chicken, chopped dill pickles, shredded cabbage, and the cottage cheese mixture.
  2. Top with crispy cheese lace and serve immediately.

Notes

Tips: Swap the ground chicken for beef or plant-based alternatives. Make it ahead by preparing fillings in advance and assembling just before serving.
