Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the cream of chicken soup, sour cream, corn, Ro-tel, cooked chicken, and 2 cups of pepper jack cheese until fully mixed.
  3. Transfer the mixture into an 8×8 or 9×9 baking pan, placing it on top of a baking sheet to catch any spills.
  4. Sprinkle the remaining 1 cup of pepper jack cheese over the top of the casserole.
  5. Evenly spread the crushed Nacho Cheese Doritos atop the cheese.
Baking
  1. Cover the casserole with foil to prevent it from browning too quickly, and bake for 25 minutes.
  2. Remove the foil and bake for an additional 15 minutes until the top is golden and crispy.
  3. Allow the casserole to cool slightly before serving or storing for later enjoyment.

Notes

For best results, ensure chicken is thoroughly shredded or diced. Consider using rotisserie chicken for quicker prep. Don't overmix ingredients to avoid a woody texture. Add jalapeños for extra spice if desired. Let the casserole sit for a few minutes before serving for easier slicing.
