Preparation
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners for easy removal and cleanup.
- In a mixing bowl, mix the mashed bananas with the melted butter until the mixture is smooth.
- Stir in the sugar, egg, and vanilla. Mix until fully integrated.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour and cocoa powder; stir until just combined. Do not overmix.
- Fold in the chocolate chips.
Baking
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
Notes
Overmixing the batter can lead to tough muffins; gently combine the ingredients until just mixed. For serving, drizzle melted chocolate over the muffins or serve with whipped cream for a special treat.
