Ingredients

Muffin Base
  • 2 pieces ripe bananas, mashed adds natural sweetness and moisture; the riper, the better.
  • 1/3 cup melted butter provides richness; can be substituted with vegetable oil for a dairy-free option.
  • 1/2 cup sugar sweetness; consider using coconut sugar for a lower glycemic index.
  • 1 large egg binds the ingredients together; for a vegan option, use a flax egg.
  • 1 teaspoon vanilla extract enhances flavor; don’t skip this for the best taste.
  • 1 teaspoon baking soda helps the muffins rise; ensure it’s fresh for maximum lifting power.
  • Pinch of salt balances sweetness; a key ingredient for enhancing flavor.
  • 1 cup all-purpose flour provides structure; can substitute with whole wheat flour for added fiber.
  • 1/3 cup cocoa powder gives the muffins their chocolatey goodness; unsweetened is preferred.
  • 1/2 cup chocolate chips for that chocolate burst; dark chocolate chips or chunks add depth.

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners for easy removal and cleanup.
  2. In a mixing bowl, mix the mashed bananas with the melted butter until the mixture is smooth.
  3. Stir in the sugar, egg, and vanilla. Mix until fully integrated.
  4. Sprinkle the baking soda and salt over the mixture and mix in.
  5. Add the flour and cocoa powder; stir until just combined. Do not overmix.
  6. Fold in the chocolate chips.
Baking
  1. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  2. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Overmixing the batter can lead to tough muffins; gently combine the ingredients until just mixed. For serving, drizzle melted chocolate over the muffins or serve with whipped cream for a special treat.
