  • 4 pieces ripe mangoes, pitted and peeled A key ingredient that gives richness and tropical flavor.
  • 1 1/4 cup Almond Breeze Almondmilk Hint of Honey Vanilla, divided Adds creaminess and a hint of sweetness without excess sugar.
  • 1/2 cup non-fat Greek vanilla flavored yogurt Contributes protein and creaminess.
  • 1 tablespoon sugar (or more to taste, optional) Adjust for sweetness depending on the ripeness of your mangoes.

Method
 

Preparation
  1. Place 3 mangoes, roughly chopped, into a blender with 3/4 cup almond milk, yogurt, and sugar to taste. Blend for 1 minute or until smooth.
  2. Chop the remaining mango into small pieces and add a few chunks into the bottoms of the popsicle molds.
Freezing Stage
  1. Pour the blended mango mixture into the bottom third of the mold and freeze for about an hour.
  2. After an hour, add a few more chopped mango pieces to the middle third of the mold and fill to two-thirds full with the remaining 1/2 cup of almond milk.
  3. Pop in your sticks and freeze for another 30 minutes to an hour.
  4. Top off by adding the rest of the mango mixture and mango chunks, then freeze for at least 3-5 hours.

Notes

For the best results, let the pops sit at room temperature for a few minutes before serving, and consider using silicone molds for easy removal.
