Preparation
- Preheat your oven to 230 degrees F.
- Using a mandoline, slice the zucchini about 1/8 inch thick.
- Lay the sliced chips on a paper towel and let them sit for 20 minutes to draw out excess moisture.
- Pat the zucchini slices dry with another paper towel.
Cooking
- In a large bowl, lightly toss the zucchini chips with 1 teaspoon of oil, along with salt and pepper to taste.
- Add 1 teaspoon of oil or cooking spray to a baking sheet.
- Spread the zucchini chips in a single layer on the baking sheet.
- Bake for 2 ½ hours, turning halfway through, or until crisp.
Notes
These chips can be paired with a yogurt-based dip or hummus for a delightful contrast in flavors. To maintain crispiness, store in an airtight container at room temperature.
