Ingredients
  

For the Beef and Sauce
  • 3 Tablespoons cornstarch, divided Helps thicken the sauce and tenderize the beef.
  • 1 pound flank steak, cut into thin 1-inch pieces A lean, flavorful cut ideal for quick cooking.
  • 1/2 cup low-sodium soy sauce Keeps the dish flavorful without excessive sodium.
  • 3 Tablespoons packed light brown sugar Adds a slight sweetness counterbalancing salty flavors.
  • 1 Tablespoon minced garlic Lends aromatic depth and enhances the overall flavor.
  • 2 teaspoons grated fresh ginger Adds warmth and a hint of spice.
  • 2 Tablespoons vegetable oil, divided For sautéing and preventing sticking.
For the Vegetables
  • 4 cups small broccoli florets Packed with vitamins, adds color and crunch to the dish.
  • 1/2 cup sliced white onions Offers a sweet undertone that complements the beef.

Method
 

Preparation
  1. In a large bowl, whisk together 2 tablespoons of cornstarch with 3 tablespoons of water. Add the beef to the bowl and toss to combine.
  2. In a separate small bowl, whisk the remaining 1 tablespoon of cornstarch with the soy sauce, brown sugar, garlic, and ginger. Set this flavorful sauce aside.
Cooking
  1. Heat a large nonstick sauté pan over medium heat. Add 1 tablespoon of vegetable oil and once it’s hot, add the beef. Cook, stirring constantly until the beef is almost cooked through (about 3-5 minutes).
  2. Use a slotted spoon to transfer the beef to a plate and set aside. Add the remaining 1 tablespoon of vegetable oil to the pan, heating it until hot. Then, add the broccoli florets and sliced onions. Cook for about 4 minutes or until the broccoli is tender and bright green.
  3. Return the beef to the pan, then add the prepared sauce. Bring the mixture to a boil, stirring for about 1 minute or until the sauce thickens slightly.
  4. Serve over rice or noodles.

Notes

Prepare ingredients ahead of time to make cooking easier. Serve with jasmine rice, brown rice, or whole grain noodles. Store leftovers in an airtight container for up to 3-4 days.
