  • 1 can (15 oz) Black Beans Use canned for convenience
  • 1.5 cups Frozen Sweet Corn Can substitute with canned corn
  • 1 can (15 oz) Diced Tomatoes Adds brightness to the dish
  • 2 cups Chicken or Turkey Broth Foundation of the chili's depth
  • 2 cups Shredded Chicken or Turkey Use leftovers or rotisserie chicken
Spices
  • 1 teaspoon Chili Powder Adjust to taste for spiciness
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Chili Flakes

  • Sea Salt and Pepper To taste

Method
 

Cooking
  1. Heat olive oil in a pot over medium-high heat.
  2. Add diced sweet onion, chopped red bell pepper, and minced garlic; sauté until tender, about 5-7 minutes.
  3. Stir in black beans, frozen sweet corn, diced tomatoes, chicken or turkey broth, shredded chicken or turkey, chili powder, ground cumin, dried oregano, and chili flakes.
  4. Lower the heat and simmer for about 15-20 minutes, allowing the flavors to blend.
  5. Season with sea salt and pepper to taste. Serve hot with your favorite toppings.

Notes

Customize with your favorite beans or meat; add jalapeños for extra heat. Serve with cornbread or rice for a complete meal.
