Ingredients
  

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy whipping cream (for melting)
  • 2/3 cup chilled heavy whipping cream (for whipping)
  • 1-2 tablespoons powdered sugar
  • 1/4 teaspoon pure vanilla extract (optional)

Equipment

  • hand or stand mixer to whip cream
  • rubber spatula for folding cream into chocolate

Method
 

  1. In a large bowl, heat chocolate chips and 1/2 cup cream until the chocolate melts and mixture is smooth. Stir well and let cool to room temperature.
  2. In a separate bowl, beat 2/3 cup chilled cream with powdered sugar and vanilla until stiff peaks form. Refrigerate until chocolate mixture cools.
  3. Gently fold the whipped cream into the cooled chocolate mixture using a spatula. Divide into serving dishes and chill for at least 2 hours before serving.

Notes

For the best results, let the mousse chill for at least two hours before serving. Use good quality chocolate chips, and keep your heavy cream cold to achieve perfect whipped peaks. You can also try variations with dark or white chocolate.
