Ingredients
  

For the garlic bread
  • 8 slices Italian bread (½-inch thick) The foundation of our bruschetta.
  • ¼ cup olive oil Can be replaced with avocado oil.
  • 1 clove garlic (cut in half) To enhance the bread's flavor.
For the topping
  • 2 cups fresh grape or cherry tomatoes (diced) Bursts with sweetness; opt for Roma tomatoes in their season.
  • ¼ cup freshly grated parmesan cheese A must for flavor; substitute with pecorino for a stronger taste.
  • ¼ cup fresh basil ribbons Bright, herby notes; swap with parsley if needed.
  • 2 cloves garlic (minced) For added flavor in the topping.
  • to taste Salt and fresh ground pepper To season the mixture.
  • 1 tablespoon olive oil For combining with the toppings.
  • 1 tablespoon balsamic vinegar Adds depth to the tomato mixture.

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Line a baking sheet with parchment paper or foil.
  3. Brush each slice of Italian bread with olive oil, laying them oiled-side down on the baking sheet.
Toasting the bread
  1. Toast the bread in the oven for about 8 to 10 minutes, keeping a watchful eye.
  2. Once golden, flip the bread slices and rub the cut side of the garlic cloves over each piece.
Preparing the topping
  1. In a mixing bowl, combine diced tomatoes, parmesan, basil, and minced garlic.
  2. Season with salt and pepper and toss lightly.
Combining toppings
  1. Drizzle in the olive oil and balsamic vinegar, mixing everything thoroughly.
Assembling
  1. Scoop generous spoonfuls of the tomato mixture onto each garlic bread slice.
  2. Drizzle with balsamic glaze just before serving.

Notes

Use day-old bread for the best texture. Consider letting the tomato mixture sit for a few minutes before serving for enhanced flavors.
