- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, heat olive oil over medium heat until it gently shimmers.
- Add the rice and toast for 2-3 minutes, stirring frequently.
- Pour in the broth, lemon juice, lemon zest, and sprinkle in the oregano. Season with salt and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff with a fork, garnish with fresh parsley, and serve warm.
Notes
Pairs well with grilled chicken or fish, Mediterranean-inspired dishes, and stored well for meal prep. Avoid rinsing the rice and lifting the lid frequently during cooking.
