Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat olive oil over medium heat until it gently shimmers.
  3. Add the rice and toast for 2-3 minutes, stirring frequently.
  4. Pour in the broth, lemon juice, lemon zest, and sprinkle in the oregano. Season with salt and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit covered for 5 minutes.
  7. Fluff with a fork, garnish with fresh parsley, and serve warm.

Notes

Pairs well with grilled chicken or fish, Mediterranean-inspired dishes, and stored well for meal prep. Avoid rinsing the rice and lifting the lid frequently during cooking.
