Ingredients
  

Cheese Mixture
  • 15 oz Ricotta Cheese Substitute with cottage cheese for a lighter option.
  • 2 large Eggs Can use a flax egg for a vegan version.
  • 1/2 cup Parmesan Cheese Substitute with nutritional yeast for dairy-free.
  • 2 cups Mozzarella Cheese Use a non-dairy mozzarella if preferred.
  • 2 tbsp Fresh Parsley Use dried parsley in a pinch.
Lasagna Base
  • 24 oz Marinara Sauce Homemade or store-bought works great.
  • 9 pieces Lasagna Noodles No-boil varieties save time.

Method
 

Preparation
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 13x9 inch baking pan.
  2. In a large bowl, combine ricotta cheese, eggs, parmesan cheese, parsley, and one cup of mozzarella cheese. Mix until well combined.
Assembly
  1. Place 1 and 1/2 cups of spaghetti sauce at the bottom of the prepared baking pan. Gently place four lasagna noodles onto the sauce.
  2. Add approximately 1/3 of the cheese mixture on top of the noodles, gently spreading it across.
  3. Top cheese with 1 cup of sauce, then add noodles again followed by more cheese. Repeat one more time, finishing with a final layer of sauce.
  4. Sprinkle remaining mozzarella cheese evenly over the top.
Baking
  1. Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 10 minutes.
  2. Remove from oven and allow to stand for ten minutes prior to serving.

Notes

Slice your lasagna into squares and serve hot, garnished with a sprinkle of fresh parsley or extra parmesan cheese. Pair with a crisp green salad for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 3 days.
