Preparation
  1. In a saucepan over medium heat, heat olive oil.
  2. Add chopped onion and garlic, sauté until softened and fragrant.
  3. Stir in the rice, cumin, chili powder, salt, and pepper; cook for 1-2 minutes until the rice is lightly toasted.
  4. Add vegetable broth and bring to a boil.
  5. Cover, reduce heat to low, and simmer for 18-20 minutes or until the rice is tender and liquid is absorbed.
  6. Fluff with a fork and garnish with cilantro if desired.

Notes

Do not skip the toasting step; it enhances flavor. Ensure broth is boiling before adding rice to prevent uneven cooking. Resist lifting the lid while simmering for perfect fluffy rice.
