Preparation
- Preheat your oven to 450 degrees.
- Line a baking tray with parchment paper.
- Rinse your asparagus thoroughly under cold water, then dry with a clean kitchen towel.
- Trim off the woody ends of the asparagus, about 1-2 inches.
Roasting
- Place the asparagus on the prepared tray and drizzle with olive oil, rolling to coat evenly.
- Sprinkle with kosher salt and fresh cracked pepper.
- Roast in the preheated oven for 9-10 minutes, or until tips are browned and stalks are tender yet crisp.
- Remove from the oven and drizzle again with olive oil.
- Sprinkle with freshly grated parmesan cheese and drizzle the juice of 1/2 lemon over the asparagus before serving.
Notes
For best results, arrange asparagus in a single layer and always start with a properly heated oven. You can experiment with seasonings like garlic powder or red pepper flakes for different flavors.
