Easy Popover Recipe

Ingredients
  

  • 4 large eggs, at room temperature
  • 1 1/2 cups whole milk, warmed to 110°F
  • 3/4 teaspoon salt
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 3 tablespoons butter, melted

  • Popover pan essential for tall, airy popovers
  • Oven preheated to 450°F
  • Nonstick spray to coat wells and rims
  • Knife for piercing after baking

Method
 

  1. Blend eggs, milk, and salt. Add flour and blend until smooth. Add butter and blend until frothy.
  2. Let batter rest at room temperature for 15 minutes.
  3. Preheat oven to 450°F. Place popover pan in oven for 2 minutes to heat.
  4. Spray wells and rims with nonstick spray. Pour batter nearly to the top of each well.
  5. Bake for 20 minutes at 450°F. Don’t open the oven door.
  6. Reduce to 350°F and bake 10 more minutes. Still no peeking!
  7. Remove from oven, pierce each with a knife to release steam, and serve warm.

Notes

These popovers are best fresh from the oven. For added flavor, try stirring in herbs or shredded cheese before baking. Always pierce after baking to release steam and preserve crispness.
