Ingredients
  

For the ceviche
  • 3/4 lb Fresh Snapper Lean source of protein; use fresh for best flavor.
  • 3 whole Limes 2 for marinading, 1 for serving.
  • 1 tsp Sea salt Enhances overall flavor; adjust according to taste.
  • 1 tsp Pepper Adds a hint of spice that complements the snapper.
  • 1 cup Fresh pineapple (cubed) Sweetens the dish and adds texture; can substitute mango if preferred.
  • 1/2 whole Jalapeño (thinly sliced) Gives a kick; use less for milder flavors.
  • 2 tbsp Shallot (diced) Adds a subtle onion flavor without overwhelming the dish.
  • 1 handful Cilantro Fresh herb that brightens the ceviche; parsley can be used as a substitute.
  • 1 tbsp Olive oil For richness; can omit for a lighter version.
  • 1 tbsp Tajin for topping Enhances flavor with its chili-lime blend; optional.
  • 1 whole Avocado (cubed) Creaminess that balances the acidity; use a ripe one for best results.
For the tortilla chips
  • 6 pieces Tortillas (cut into triangles) Homemade chips for scooping; air fryer or bake until crispy.
  • 1 cup Fry oil of choice For frying tortilla chips; can use olive oil or vegetable oil.
  • 1 tsp Sea salt For seasoning the chips.
  • 1 tsp Pepper For seasoning the chips.
  • 1 tsp Paprika For seasoning the chips.
  • 1/2 tsp Chili powder For seasoning the chips.

Method
 

Preparation
  1. Cut the snapper into small, bite-sized pieces.
  2. In a bowl, combine snapper, lime juice from 2 limes, sea salt, and pepper. Mix well and let it marinate for 15 minutes, stirring occasionally.
Mixing Ingredients
  1. While the fish is marinating, in another bowl, add diced shallot, cubed pineapple, and sliced jalapeño. Toss gently to combine.
  2. Once the snapper is marinated, transfer it to the vegetable mixture. Add cilantro and olive oil, then gently toss to combine.
Preparing Tortilla Chips
  1. Heat frying oil in a pan over medium heat and fry the tortilla triangles until golden and crispy, about 2-3 minutes per side.
  2. Drain the chips on paper towels and sprinkle with seasonings while warm.
Serving
  1. Just before serving, add cubed avocado into the ceviche mixture. Spoon the ceviche into serving dishes and top with Tajin if desired.

Notes

For a unique twist, experiment with different fruits like mango or papaya. Serve ceviche in avocado halves for a stunning presentation. Make extra chips and store them in an airtight container for snack time.
