Preparation
- Cut the snapper into small, bite-sized pieces.
- In a bowl, combine snapper, lime juice from 2 limes, sea salt, and pepper. Mix well and let it marinate for 15 minutes, stirring occasionally.
Mixing Ingredients
- While the fish is marinating, in another bowl, add diced shallot, cubed pineapple, and sliced jalapeño. Toss gently to combine.
- Once the snapper is marinated, transfer it to the vegetable mixture. Add cilantro and olive oil, then gently toss to combine.
Preparing Tortilla Chips
- Heat frying oil in a pan over medium heat and fry the tortilla triangles until golden and crispy, about 2-3 minutes per side.
- Drain the chips on paper towels and sprinkle with seasonings while warm.
Serving
- Just before serving, add cubed avocado into the ceviche mixture. Spoon the ceviche into serving dishes and top with Tajin if desired.
Notes
For a unique twist, experiment with different fruits like mango or papaya. Serve ceviche in avocado halves for a stunning presentation. Make extra chips and store them in an airtight container for snack time.
