Preparation
- Preheat oven to 350°F (180°C) or 320°F (160°C fan-forced).
- Grease a 12-hole muffin pan with butter or spray lightly with oil.
- In a large mixing bowl, combine the flours, baking powder, and cinnamon. Whisk briefly.
- In a medium-sized bowl, whisk together the vanilla, eggs, oil, maple syrup, and buttermilk.
- Make a well in the center of the dry ingredients and add the wet mixture. Gently stir until just combined.
- If using, add blueberries and chocolate chips, folding gently into the batter.
Baking
- Spoon the muffin batter into the prepared pan, filling each hole about two-thirds full.
- Bake for 17-18 minutes, or until golden brown and springy to the touch.
- Remove from oven and allow to cool completely on a wire rack.
Notes
For extra fluffiness, let buttermilk sit at room temperature for a few minutes. Add chia seeds or oat flakes for added texture. Allow muffins to cool before running a knife around edges to release.
