Ingredients
  

Dry Ingredients
  • 140 grams plain flour or all-purpose flour Can be replaced with gluten-free flour.
  • 105 grams wholemeal flour or whole wheat flour Can be substituted with oat flour.
  • 2 teaspoons baking powder Ensure it's fresh for best results.
  • 1 teaspoon cinnamon Nutmeg can be used as an alternative.
Wet Ingredients
  • 1 teaspoon vanilla extract Optional; vanilla powder can be a suitable substitute.
  • 2 large eggs Replace with flax eggs for a vegan option.
  • 80 ml flavorless oil Applesauce can be used for a lower-fat option.
  • 80 ml maple syrup Honey can be used if suitable for toddlers.
  • 240 ml full-fat buttermilk or Greek yogurt Dairy-free yogurt can serve as a substitute.
Add-Ins
  • 125 grams fresh or frozen blueberries If using frozen, do not thaw.
  • 1 handful sugar-free chocolate chips Optional; dark chocolate chips recommended.

Method
 

Preparation
  1. Preheat oven to 350°F (180°C) or 320°F (160°C fan-forced).
  2. Grease a 12-hole muffin pan with butter or spray lightly with oil.
  3. In a large mixing bowl, combine the flours, baking powder, and cinnamon. Whisk briefly.
  4. In a medium-sized bowl, whisk together the vanilla, eggs, oil, maple syrup, and buttermilk.
  5. Make a well in the center of the dry ingredients and add the wet mixture. Gently stir until just combined.
  6. If using, add blueberries and chocolate chips, folding gently into the batter.
Baking
  1. Spoon the muffin batter into the prepared pan, filling each hole about two-thirds full.
  2. Bake for 17-18 minutes, or until golden brown and springy to the touch.
  3. Remove from oven and allow to cool completely on a wire rack.

Notes

For extra fluffiness, let buttermilk sit at room temperature for a few minutes. Add chia seeds or oat flakes for added texture. Allow muffins to cool before running a knife around edges to release.
