- In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

- Add white beans, vegetable broth, oregano, and basil to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Stir in the spinach and cook until wilted.
