  • 4 cups Fresh rhubarb, cut into 1-2 inch pieces Use vibrant, firm stalks for best results.
  • 1/4 cup Maple syrup Can be substituted with agave nectar.
  • 2 tablespoons Coconut oil, melted Or use neutral oil; olive oil is also acceptable.
  • 1 teaspoon Cinnamon Feel free to experiment with other spices like nutmeg.
  • 1 pinch Salt Enhances the overall flavor, don't skip it.

Preparation
  1. Preheat your oven to 400°F (200°C) for even roasting.
  2. Wash and trim the rhubarb, cutting the stalks into 1-2 inch pieces.
Mixing & Roasting
  1. In a mixing bowl, combine rhubarb pieces, maple syrup, melted coconut oil, cinnamon, and salt. Mix until well coated.
  2. Spread the rhubarb mixture evenly on a parchment-lined baking sheet.
  3. Roast in the preheated oven for 15-20 minutes until tender and caramelized.
  4. Serve warm as a dessert or topping for yogurt or oatmeal.

Notes

Overcooking may result in mushy rhubarb, so keep an eye on it. Consider adding nuts or seeds for added texture and nutrition.
