  • 1 14-ounce block extra-firm tofu Provides a solid base for the patties.
  • 2 tablespoons nutritional yeast Adds a cheesy flavor.
  • 1 tablespoon garlic powder Intense flavor booster.
  • 1 tablespoon onion powder Enhances savory taste.
  • 2 teaspoons smoked paprika Gives a smoky depth.
  • 1/2 teaspoon turmeric Adds vibrant color and health benefits.
  • to taste black salt (Kala Namak) For an authentic eggy flavor, added after baking.
  • as needed cashew mayonnaise A creamy layer to add on top.
  • to taste micro-greens Adds freshness and a nutritional kick.

Method
 

Preparation
  1. Preheat your oven to 375˚F.
  2. Slice tofu in half width-wise, creating two equal large pieces. Then, cut each piece in half length-wise so that you end up with four equal tofu pieces.
  3. Stir all of the dry ingredients, except for the black salt, together in a bowl.
  4. Place each tofu patty in the bowl and evenly cover with the spice mixture.
Baking
  1. Place the seasoned tofu slices on a baking sheet lined with parchment paper. Bake for 10 minutes.
  2. Flip the tofu slices and bake for another 10 minutes. If you crave a crispy texture, bake for an extra 5 minutes per side.
Serving
  1. Remove the patties from the oven, sprinkle them with black salt, and enjoy your delicious creation!

Notes

Meal prep these patties in advance to save cooking time during busy weeks. Experiment with the spice mix to customize to your family’s preferences. Serve with avocado spread for extra creaminess.
