Preparation
- Preheat the oven to 350°F (175°C).
- Clean the leeks thoroughly, cutting them in half lengthwise. Boil in salted water for about 5 minutes until slightly softened; drain and let cool.
Cooking
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
- In a mixing bowl, combine ground beef, sautéed onion, garlic, breadcrumbs, thyme, salt, and pepper. Mix thoroughly.
- Take a leek, place a portion of the beef mixture in the center, and wrap the leek around it.
- Arrange stuffed leeks in a baking dish, pour beef broth over them, and cover with foil.
- Bake for 30-40 minutes, then remove the foil and bake for an additional 10 minutes until the beef is cooked through.
- Serve warm, garnished with herbs if desired.
Notes
For best results, sauté leeks lightly before wrapping for added sweetness. Allow the stuffed leeks to rest for a few minutes before serving to enhance flavors. Serve with a sprinkle of fresh herbs on top.
