  • 1 cup Beef Broth Keeps the dish moist; vegetable broth can be substituted.
  • 2 tablespoons Olive Oil For sautéing; any preferred cooking oil may be used.

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Clean the leeks thoroughly, cutting them in half lengthwise. Boil in salted water for about 5 minutes until slightly softened; drain and let cool.
Cooking
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
  2. In a mixing bowl, combine ground beef, sautéed onion, garlic, breadcrumbs, thyme, salt, and pepper. Mix thoroughly.
  3. Take a leek, place a portion of the beef mixture in the center, and wrap the leek around it.
  4. Arrange stuffed leeks in a baking dish, pour beef broth over them, and cover with foil.
  5. Bake for 30-40 minutes, then remove the foil and bake for an additional 10 minutes until the beef is cooked through.
  6. Serve warm, garnished with herbs if desired.

Notes

For best results, sauté leeks lightly before wrapping for added sweetness. Allow the stuffed leeks to rest for a few minutes before serving to enhance flavors. Serve with a sprinkle of fresh herbs on top.
