  • 1 cup Medjool dates, seeded Naturally sweet; dried figs or apricots can be used as alternatives.
  • 1 cup desiccated or unsweetened shredded coconut Adds a chewy texture; you can replace this with oats for added fiber.
  • 3 tablespoons extra virgin olive oil Binds everything together; coconut oil works well if you prefer a different flavor.
  • 2 teaspoons ground cinnamon Offers warmth; nutmeg or ginger can provide fun twists.
  • 1/2 teaspoon ground clove Introduces depth; use allspice for a different flavor profile.
  • 1 tablespoon honey (optional) Sweetens slightly; agave syrup or maple syrup works as vegan alternatives.
  • 1/2 teaspoon flaky sea salt Enhances flavors; feel free to use regular salt if you don’t have flaky.
  • 1 cup desiccated or unsweetened shredded coconut or finely chopped almonds for coating Use ground almonds or a nut mix if desired.

Method
 

Preparation
  1. Blitz the almonds: Place the almonds in a food processor and blitz until they’re mostly fine, but avoid grinding them into a powder; we want that crunch!
  2. Add the dates, coconut, olive oil, cinnamon, clove, honey (if using), and salt to the processor. Pulse for about 30-50 seconds until the mixture holds its shape when squeezed between your hands.
  3. Using a cookie scoop or a tablespoon, take a portion of the mixture and place it between your palms. Press firmly to shape it into a ball.
  4. Roll the balls in desiccated coconut or blitzed almonds, then place them in the freezer for 30 minutes to firm up.

Notes

Store your Energy Balls in a sealed container in the fridge for up to a week. They’ll stay fresh, chewy, and delicious! You can freeze them for up to three months.
