Corn Base

Dressing

Method
 

Preparation
  1. Preheat broiler to high or heat grill to medium high heat. Place corn on grill or under broiler. Cook for 8 to 10 minutes, turning to char all sides. Let cool for 5 minutes.
  2. Cut kernels from corn cobs into a large bowl.
  3. In a small bowl, whisk together mayonnaise, lime juice, Cotija, and cilantro. Season with salt and pepper.
  4. Pour dressing over corn and gently fold together.
Assembly
  1. Divide mixture among cups or mason jars.
  2. Top with additional Cotija, cilantro, minced red onion, and chili powder.
  3. Serve warm or refrigerate for up to 2 hours.

Notes

Choose the freshest corn possible for the best results. Add garnishes just before serving to maintain color and texture.
