Ingredients

Wet Ingredients
  • 3 large eggs Create structure and richness while helping bind the ingredients together.
  • 1 teaspoon vanilla extract Enhances flavor with a warm aromatic touch.
  • to taste stevia glycerite A natural sweetener that provides sweetness without added sugar.
  • 1 cup plain Greek yogurt Adds creaminess and a protein boost, promoting a fluffy texture.
Dry Ingredients
  • 1 cup unsweetened whey protein powder Provides protein and supports the fluffy nature of the pancakes.
  • 2 teaspoons baking powder Helps the pancakes rise, ensuring they are light and airy.
Cooking Supplies
  • as needed avocado oil cooking spray To grease the griddle and prevent sticking.

Method

Preparation
  1. In a medium bowl, whisk the eggs, vanilla, stevia, and yogurt until well combined and smooth.
  2. Add the protein powder to the mixture and whisk until completely smooth. Use a rubber spatula if needed to scrape down the sides.
  3. Whisk in the baking powder until fully blended.
  4. Allow the batter to rest for a few minutes; it will thicken as it sits.
Cooking
  1. Preheat a nonstick griddle or skillet over medium heat, then spray the surface with avocado oil cooking spray.
  2. Using a 1.5-tablespoon cookie scoop, pour small mounds of the batter onto the griddle.
  3. Cook the pancakes until they bubble on top, about one minute, then flip and cook for just 10 to 20 seconds on the other side.
  4. Lower the heat if necessary to avoid dry, rubbery pancakes.
  5. Move the cooked pancakes to a plate, cover with foil to keep warm, and continue cooking the rest.
  6. Enjoy your fluffy protein pancakes fresh off the griddle.

Notes

For best results, avoid over-mixing and let the batter rest. Customize with toppings like berries, nut butter, or syrup.
