Ingredients
  

For the Chicken Marinade
  • 4 pieces boneless skinless chicken breasts Lean protein source
  • 1/2 cup barbecue sauce Adds smoky sweetness

For the Vegetables
  • 1 medium zucchini Healthy vegetable option
  • 1 medium red bell pepper Adds color and crunch
  • 1 medium yellow or orange bell pepper Sweet flavor
  • 1/2 teaspoon salt Essential for flavor
  • 2 tablespoons olive oil For drizzling on vegetables
  • 2 tablespoons green onions For garnish

Method
 

Preparation
  1. In a large ziptop plastic bag, add chicken, barbecue sauce, honey, apple cider vinegar, 2 tablespoons olive oil, and black pepper. Seal and squish to coat chicken. Marinate in the fridge for at least 15 minutes or overnight for deeper flavors.
  2. Preheat your grill to medium-high heat or preheat the oven to 425°F.
  3. Lay out 4 large sheets of foil on the counter, ready to form your packs.
  4. Place a portion of the marinated chicken in the center of each sheet of foil.
  5. Surround the chicken with diced zucchini and bell peppers, creating a colorful medley.
  6. Drizzle the remaining olive oil over the vegetables and season with salt and pepper to taste.
  7. Fold the edges of the foil tightly to create a secure pouch.
Cooking
  1. Grill for 9-10 minutes or bake in the oven, checking for doneness after about 40 minutes.
  2. Optionally, top the cooked packs with sliced green onions before serving immediately.

Notes

For maximum flavor, marinate chicken for longer. Adjust cooking time as needed based on your cooking method. Customize vegetables based on availability.
