Preparation
- Grate the carrots using a box grater, julienne peeler, or food processor fitted with a grating attachment until you have about 3 cups of grated carrots.
- Place the grated carrots in a medium serving bowl and add the chives, parsley, and optional chickpeas.
Dressing
- Whisk all dressing ingredients together in a small bowl until blended.
- Pour the dressing over the carrot mixture and stir until evenly coated.
- For the best flavor, allow the salad to marinate for 20 minutes before serving. Toss again before serving.
Notes
For optimal crispness, store in an airtight container in the fridge for up to four days. Not recommended to freeze due to texture changes.
