Salad Base
  • 1 pound carrots, peeled Choose fresh and firm carrots for the best flavor.
  • 2 tablespoons chives or green onion, finely snipped Adds a mild onion flavor and a beautiful pop of color.
  • 2 tablespoons parsley, finely chopped Fresh parsley brightens the salad, substitute with cilantro if preferred.
  • 1 can (15 ounces) chickpeas, rinsed and drained Optional, adds heartiness but can be omitted for a lighter dish.
Dressing
  • 2 tablespoons extra-virgin olive oil Choose high-quality oil for the best flavor and health benefits.
  • 2 tablespoons lemon juice, fresh Fresh juice enhances the salad’s freshness.
  • 2 teaspoons honey This adds a hint of natural sweetness; maple syrup is a suitable vegan substitute.
  • 1 teaspoon Dijon mustard Provides a tangy kick.
  • ½ teaspoon ground cumin Adds depth, adjust to taste.
  • ¼ teaspoon fine sea salt Always taste before adding more.

Method
 

Preparation
  1. Grate the carrots using a box grater, julienne peeler, or food processor fitted with a grating attachment until you have about 3 cups of grated carrots.
  2. Place the grated carrots in a medium serving bowl and add the chives, parsley, and optional chickpeas.
Dressing
  1. Whisk all dressing ingredients together in a small bowl until blended.
  2. Pour the dressing over the carrot mixture and stir until evenly coated.
  3. For the best flavor, allow the salad to marinate for 20 minutes before serving. Toss again before serving.

Notes

For optimal crispness, store in an airtight container in the fridge for up to four days. Not recommended to freeze due to texture changes.
