Preparation
- Slice the large yellow onions and place them in a skillet with butter over medium heat. Cook, stirring occasionally, until they become soft and golden brown, about 12 to 15 minutes.
- Generously season the chuck roast with salt and pepper. Sear it in a hot skillet for 3 to 4 minutes on each side until it develops a beautiful crust.
Cooking
- In a slow cooker, layer the caramelized onions, then place the roast on top. Add the beef broth, Worcestershire sauce, minced garlic, and dried thyme.
- Cover and cook on low for 8 to 9 hours or high for 5 to 6 hours.
Serving
- Once finished, carefully remove the roast, shred or slice it, and spoon the onion gravy generously over the top. Finish with a sprinkle of fresh parsley.
Notes
To enhance flavor and tenderness, do not skip the searing step. Allow adequate cooking time for optimal results. You can prepare the meal the night before and combine everything in the slow cooker to start in the morning.
