  • 2 cups beef broth Provides base flavor; can substitute with chicken or vegetable broth.
  • 2 tablespoons Worcestershire sauce A flavor booster; soy sauce can be used for a different taste.
  • 4 cloves garlic, minced Essential for depth; use garlic powder in smaller amounts if necessary.
  • 1 teaspoon dried thyme Introduces earthy notes; fresh thyme is an excellent swap if available.
  • 2 teaspoons salt Essential for seasoning; adjust to taste preference.
  • 1 teaspoon black pepper Adds warmth; swap for white pepper if desired.
  • 2 tablespoons chopped fresh parsley For garnish; omit if allergies exist.

Preparation
  1. Slice the large yellow onions and place them in a skillet with butter over medium heat. Cook, stirring occasionally, until they become soft and golden brown, about 12 to 15 minutes.
  2. Generously season the chuck roast with salt and pepper. Sear it in a hot skillet for 3 to 4 minutes on each side until it develops a beautiful crust.
Cooking
  1. In a slow cooker, layer the caramelized onions, then place the roast on top. Add the beef broth, Worcestershire sauce, minced garlic, and dried thyme.
  2. Cover and cook on low for 8 to 9 hours or high for 5 to 6 hours.
Serving
  1. Once finished, carefully remove the roast, shred or slice it, and spoon the onion gravy generously over the top. Finish with a sprinkle of fresh parsley.

Notes

To enhance flavor and tenderness, do not skip the searing step. Allow adequate cooking time for optimal results. You can prepare the meal the night before and combine everything in the slow cooker to start in the morning.
